We just love stuffed eggs! One of the reasons is that they can take all kinds of ingredients, although our favourite are those that include tinned fish. Like these by María Rosa, with White Tuna and avocado. Don’t miss her recipe! If you prepare it, success is guaranteed.
Ingredients
- Boiled eggs – 6
- White Tuna in olive oil – 1 jar
- Avocado – 1
- Tomato – 1 small
- Chives – chopped to taste
- Extra virgin olive oil
- Balsamic raspberry vinegar
- Salt
- Roasted pepper – (optional)
Preparation
- Peel the eggs, cut them in half, separate the yolk and set them aside.
- In a bowl add the White Tuna fillets separated into flakes, the diced avocado, the diced tomato and the chives.
- Mix and fill the egg whites.
- On a plate, grate the egg yolks.
- Put the stuffed eggs on top and decorate with roasted pepper strips (optional).
- Last of all dress with the vinaigrette to taste.
