Endives stuffed with crispy salad
This Easter at home, we bring you a recipe for endives stuffed with salad. Iratxe sent it to us, explaining that she usually uses other ingredients such as smoked salmon or anchovies to prepare stuffed endives, but this time she had to “manage” with what she had at home, so she improvised a “crispy salad”". Like the classic salads, it has mayonnaise, boiled egg, tuna ... But it has a few different touches, such as cucumber and carrot raw cubes to give a crisp touch. The result is still delicious and, if there are children at home, they can help mix the salad and fill the endives.
Iratxe also wanted to leave a message of thanks: "A thousand thanks to all the healthcare personnel, but also to all the people who continue to work so that life goes on as well as possible: firefighters, store and supermarket staff, farmers... There are many people working day by day. ¡Thank you!"

Instructions
- Separate and wash the leaves of the Endives.
- Cook the eggs. Let them cool.
- Peel and chop the carrot (raw) into cubes.
- Peel and chop the cucumber into cubes.
- Chop the black olives.
- Peel and chop the cooked egg.
- Mix all the ingredients in a salad bowl, along with the tuna and mayonnaise.
- Fill the “little boats” of endive with the crispy salad. The children, hat these days are at home, can help do this.
