Courgette bites stuffed with anchovies and cheese
Remember our friend Leire, who won last month’s competition with her wonderful “Tuna baskets”? Well, she’s clearly a chef of her word! As she promised in her blog “Cocinando entre fogones” after receiving our gift box, she really stoked her creative fires and has now come up with some fantastic recipes using our preserves. You can see one of them here: stuffed bites that have already made the mouths of our board of chefs water in sweet anticipation. Time to get your pans out!
Ingredients for 3 people:
- ½ Courgette
- 1 Can of Conservas Serrats anchovies
- Cheese slices
- 1 Red pepper
- 125 gr Flour
- 1 Bottle of beer (25cl)
- 1 Sachet of double-acting baking powder
- 1 pinch of salt
Directions:
- Mix the flour with the sachet of baking powder and the salt
- Add the beer little by little, stirring with a whisk
- Cover with cling film and cool in the fridge for 30 minutes
- Fry the pepper and reserve
- Wash the courgette thoroughly and cut into thin slices
- Cut the cheese into wafer-thin slices and round the edges
- Assemble the courgettes beginning with a slice of courgette followed by the fried pepper, cheese and anchovies
- Finish with a slice of courgette
- Take the mix from the fridge, add a little food colouring and mix well
- Heat a little olive oil in a frying pan, cover the stuffed courgettes with the prepared mix and fry until golden
