In all these years we have never ceased to be surprised by the wonders you come up with for our recipe competition. You’re amazing!
Today’s recipe is from Juani’s kitchen: a home-made dough, some lovingly chopped and sweated vegetables, some prawns and the special touch of our tuna in brine… They are Juana‘s little sea and garden wholegrain packages. And we’re sure that when you try them you’ll make them your own too.
Let’s get cracking!
Ingredients:
For the dough:
- 30 g of yeast
- 150 g of wholegrain rye flour
- 100 g of oat flour
- 50 g of wholegrain oat bran
- 200 g of hard flour
- 250 ml of lukewarm water
- 1 teaspoonful of salt
- 1 pinch of sugar
For the filling:
- Half a red pepper
- 1 green pepper
- 1 spring onion
- 1 large tomato
- 150 g of peeled prawns
- Yellowfin tuna
- 1 egg yolk
- 20 g of sesame
Preparation:
- Dissolve the yeast in a bit of lukewarm water, and add the salt, the sugar and some flour.
- Make it into a ball and leave it to rise.
- In a bowl, pour in the rest of the flours, the water and the ball of yeast (when it doubles in size).
- With a mixer or with a spoon, knead and make another bigger ball.
- Leave it to rise while you make the filling.
- Peel the red pepper and chop it into small pieces. Do the same with the green pepper and the spring onion.
- Fry it all in a frying pan with oil and when it is properly sweated, add the grated tomato.
- Let it fry, add salt and a teaspoonful of sugar to tame the acidity.
- After a while, add the prawns and leave it for around three minutes.
- Remove and let it cool.
- Add the tuna in brine, crumbled, and mix it all well.
- With the dough now risen, divide it into portions making little balls, and flatten them with the aid of a rolling pin, making small squares.
- Put a teaspoonful of filling in the centre and close the little package by joining the corners.
- Repeat this process with each little ball, trying to distribute the filling evenly so that all the little packages have more or less the same amount.
- Place the little packages on an oven tray covered with oven paper, brush them with egg yolk and sprinkle with sesame.
- Oven bake for 15 to 20 minutes at 200°C.
- Serve hot or at room temperature.
