Today we’re travelling to Galicia with Agustín! The author of the food blog Elbullirdeagus is a regular friend in our recipe competition and never ceases to surprise us with his tasty recipes. This time, it is a dish of mussels Galician style that are very easy to prepare thanks to our tinned products. And the result is… well, you can judge for yourselves! We’re too busy wiping our plates clean 😉
Ingredients:
- 1 tin of Serrats mussels in brine
- 300 g of small potatoes
- 3 cloves of garlic
- 1 teaspoonful of paprika
- Virgin olive oil
- Salt
- 1 bay leaf
- Fish or seafood broth
- Fresh chives
Preparation:
- Pour the broth into a saucepan and heat it.
- When it starts to boil, put in the unpeeled potatoes with a bay leaf, for 15-20 minutes, depending on the size of the potatoes.
- Check that they are cooked and let them cool.
- Peel the potatoes and cut them into slices 1/2 cm thick.
- Spread the slices around the plate.
- In a frying pan, heat the virgin olive oil and sauté the sliced garlic.
- When the garlic starts to brown and are crunchy without getting burnt, remove the frying pan from the cooker and add the teaspoonful of paprika, so that it cooks without getting burnt.
- Pour part of this sauté over the potatoes.
- Place the mussels on top.
- Pour what remains of the sauté over the mussels.
- Finely chop the chives and sprinkle them over the potatoes and mussels.
