Ingredients
- 1 250 g jar “Serrats” “Bonito del Norte (White Tuna, Albacore)” – Olive Oil
- Rice wafers for oriental spring rolls
- 1 red pepper for roasting
- 1 aubergine
- 1 tomato
- 1 onion
- 2 garlic cloves
- Oil
- Vinegar
- Salt
Preparation
- Bake the pepper, aubergine, tomato and onion. Leave to cool and set aside the liquid they sweat while cooking.
- When cool, peel the vegetables and blend with a little oil, vinegar and salt.
- Prepare the rice wafers according to the manufacturer’s instructions: “plunge into hot water for a few seconds, remove and put on a dry cloth”.
- Spread the purée over the centre of the wafer.
- Top with the “Bonito del Norte” fillets.
- Lastly, fold the wafers into little packets and serve.
