“Bonito del Norte” rice wrap with purée of Catalan vegetable medley

Ingredients

  • 1 250 g jar “Serrats” “Bonito del Norte (White Tuna, Albacore)” – Olive Oil
  • Rice wafers for oriental spring rolls
  • 1 red pepper for roasting
  • 1 aubergine
  • 1 tomato
  • 1 onion
  • 2 garlic cloves
  • Oil
  • Vinegar
  • Salt

Preparation

  • Bake the pepper, aubergine, tomato and onion. Leave to cool and set aside the liquid they sweat while cooking.
  • When cool, peel the vegetables and blend with a little oil, vinegar and salt.
  • Prepare the rice wafers according to the manufacturer’s instructions: “plunge into hot water for a few seconds, remove and put on a dry cloth”.
  • Spread the purée over the centre of the wafer.
  • Top with the “Bonito del Norte” fillets.
  • Lastly, fold the wafers into little packets and serve.
