Cantabrian tabbouleh

We love a good fusion! And that’s exactly what today’s recipe has to offer, because Iratxe has made tabbouleh (a couscous salad that is typically eaten in certain Arab countries) and given it that Catabrian twist that we are so fond of.

An easy and refreshing recipe that’s ideal for the summer months. Let’s get cracking!

Ingredients

  • Couscous
  • Salad tomato
  • Cucumber
  • Pitted olives
  • White tuna
  • Salt
  • Oil
  • Lemon

Method

  1. Make up the couscous by following the instructions on the packet. Leave it to cool.
  2. Chop the tomato into relatively small pieces.
  3. Peel the cucumber and chop it into pieces that are about the same size as the tomato.
  4. Chop the olives.
  5. Mix all the ingredients together in a salad bowl, using a splash of lemon juice instead of vinegar as a dressing.
  6. Add the white tuna and mix again.
