The neck is one of the most unknown parts of the Tuna, and we are one of the few conservatives who keep this tradition intact. Together with the belly, it is one of the most exquisite parts of our beloved “thunnus allalunga” and is at an intermediate point of juiciness and smooth texture between the loins and the belly.

Ingredients
- Branch tomato
- Tuna neck
- Basque chillies
- Pink Himalayan salt
- Freshly ground black pepper
- Olive oil - (from the can itself)
Instructions
- Cut the tomato into wedges and put it on a plate.
- Put on top the tuna neck.
- Add some Basque chillies cut into slices and two whole ones to garnish.
- Dress with pink Himalayan salt, freshly ground black pepper, and the oil from the neck.
