Christmas starter with vegetables: crown of anchovies in vinaigrette
We continue with the recipe ideas for these holidays! Today we propose a perfect starter with vegetables for Christmas: a crown of anchovies from the Bay of Biscay in vinaigrette, delicious and with an excellent appearance. In fact, its authors, Lidia and Cristina, are experts in doing all kinds of @comidadediez.
This crown of anchovies (a real gem from the Cantabrian Sea!) is the perfect starter so that vegetables continue to have a presence in our Christmas menus. A sample that eating rich and healthy can be very simple.
Ingredients
- Anchovies in vinaigrette - one can
- Purple onion - 150 g
- Thai Eggplant - 1
- Zucchini - 1
- Green pepper - 1
- Red pepper - 1/2
- Extra virgin olive oil
- Salt
- To make the dressing
- Raspberry jam - 2 tablespoons
- Vinaigrette (from the can of anchovies) - 2 tablespoons
- Modena vinegar - a tablespoon
- Salt and pepper
Instructions
- Chop the aubergine, the zucchini and the peppers, and fry everything together with a drizzle of oil and a pinch of salt.
- Make the dressing by mixing all the ingredients in a bowl.
- Place a row of anchovies in a circular kitchen ring on the inside walls and fills a little with the vegetables.
- Subsequently, incorporate another row of anchovies on top of the previous ones on the walls of the ring and fill with more vegetables.
- Finish by adding the purple onions as if it were a crown.
- Serve it with the dressing and enjoy!
