Pickled mussel croquettes
We continue with the Christmas recipes ideas and this time we propose some pickled mussel croquettes.
Croquettes are usually one of the first appetizers to disappear from the table at Christmas. A snack that cannot be missing, especially if there are children in the family (although adults also eat them as much as they do). Crispy on the outside, creamy on the inside... In addition, we can prepare a wide variety of fillings: ham, cheese, spinach, tuna... And, mussels, to give them a touch of seafood this holiday season.
To avoid the work of having to clean and cook the fresh mussels, we suggest you make the croquettes with canned mussels. In addition, the marinade gives the dough a very interesting touch of flavor.
We give you Eva’s recipe (@felicidadenunplato). Note: remember that to make croquettes it is convenient to make the dough the day before and let it rest in the fridge all night.
Ingredients
- Pickled mussels - one can
- Onion - one small
- Extra virgin olive oil - 30 ml
- Butter - 15 g
- Milk - 500 ml
- Marinade of the mussels - 3 tablespoons
- Salt
- Nutmeg
- Beaten eggs - 2
- Bread crumbs
- Panko
- Aioli sauce - optional
Instructions
- Open the can and drain the mussels (save the marinade).
- Chop the mussels into not too small pieces.
- Peel and finely chop the onion.
- Put the oil and butter to melt in a pot.
- Add the onion and let it cook. When it begins to take color, add the flour without stopping stirring until it cooks a little and takes on a toasted color.
- Add the hot milk, stirring constantly, wait for it to start to thicken, and then add salt, nutmeg, 3 tablespoons of the marinade and the mussels. Continue cooking until the dough thickens completely.
- Put the dough in a bowl and cover with transparent film. Once it is at room temperature, put the fountain in the fridge until the next day.
- Take the dough out of the fridge and, with two spoons, shape the croquettes; dip them in beaten egg and then in the breadcrumbs and panko in equal parts mixture.
- Fry them in abundant hot olive oil. Take them out and let them rest on a grid or absorbent paper for a few minutes.
- At mealtime, you can put aioli sauce on top.
