Sea urchin caviar nests

Agustín is taking part in our recipe competition again and this time he has surprised us with some original sea urchin caviar nests, which he presents in two versions:  on small tartlets and in little glass bowls, to be eaten with a spoon

Ingredients

  • Small tartlets – 4
  • Sea urchin caviar – one tin
  • Preserved boiled quail’s eggs – 8
  • Scarole
  • Mayonnaise
  • Ground wasabi
  • Preserved surimi eggs
  • Nori seaweed – one leaf

Preparation

  1. Mix the mayonnaise sauce with a teaspoonful of ground wasabi, to give it an original touch.
  2. On the small tartlets, spread a thin layer of the mayonnaise with wasabi, some strips of nori seaweed to decorate, a layer of sea urchin caviar, a rinsed quail’s egg and some fish eggs around it all.
  3. In the small glass bowl, spread a layer of mayonnaise, add the nori seaweed decoration, a layer of Serrats sea urchin caviar, the quail’s egg and some surimi eggs.

(Agustín recommends placing the sea urchin caviar underneath the egg, hidden, to surprise the eater with its taste of the sea when they put it in their mouth).
